One of the beauties of living in rural Minnesota - the home of the Honeycrisp apple - is that we are not short on awesome, small, local orchards. After making a quick stop at Hillcrest Orchard just down the road, around the curve and up the hill, I had to come up with something to make with my bushel of handpicked fruit!
So, I rallied the troops of Jodi (One Simple Dream) and Jordi (Jordi Lee Photography) to spend the morning in the kitchen with me and my cute Weck jars that I have been hoarding to re-create this Apple Pie Jam recipe.
Here's what you need:
Yields 3 pints.
First, peel and chop the apples.
Measure apples in a measuring cup, then add water to the same measuring cup up to the 4 cup line (apples inlcuded).
Add apples with water, pectin, butter (helps reduce foam while cooking), spices and lemon juice to a large pot. Bring to a boil. Add sugars and bring back to a full rolling boil.
Boil about 1 minute longer - or until the jam thickens.
Stir constantly. Remove from heat and skim off any foam. Ladle into jars leaving 1/4" headspace.
Put on lids and process in a water bath for 10 minutes.
And wa-lah! Apple Pie Jam. So yummy and cute in those jars! The perfect gift or wedding favor.
